The one with the long hair in the old drawing, which meant the eldest and so the one in charge. That monkey runs the group and gets first chow ちょう: ちょう.
頭 あたま is the head on your shoulders. 長 is the head of a group, and it goes on the end of a title: 社長, 部長.
